咖啡拜拜蛋糕

  充满咖啡香的蛋糕,

烘烤时,厨房充满了浓浓的咖啡香。





食谱:
低筋面粉 60g
蛋黄 3个(A蛋)
沙拉油 24g
牛奶 48g
即溶咖啡粉 2小匙

蛋白 3个(A蛋)
细砂糖 45g

做法:
1. 细砂糖分3次加入蛋白中,打至湿性发泡,备用。
2. 即溶咖啡与牛奶混合均匀,接着加入沙拉油搅拌均匀。加入过筛的低筋面粉,稍微拌匀
3. 加入蛋黄搅拌均匀,
4. 取1/3蛋白霜,加入(3)中搅拌均匀后,将面糊倒入剩余的2/3蛋白霜中搅拌均匀。
5. 倒入6寸分离膜,轻敲几下,震出大气泡。
6. 放入预热170度烤箱,中下层,烘烤大约10分钟后取出,在蛋糕上划上“十”字形后,马上放回烤箱继续烘烤大约23分钟。
8. 出炉后倒扣至凉。

  1. Tried and give soft texture. But the center collapse and not blossom. May I know is the batter about the same height as the baking pan before sending into oven? Thinking is it without support from the side the cake will rise and blossom. Thanks in advance.

      Fyi I beaten my whites till stiff stage, do you think it that the possibility the center collapse?
      I bake mine at 130C first then 150C for the rest of baking time (which I used to bake my sponge cake). It rise beautifully but sink once it is fully cooked. Do you think the oven temperature still too high and cause the cake rise too fast and sink once cooked?
      You are so good in baking this as can get it right and blossom. Appreciate your help :)

    3. hi, i beat egg whites till soft stage, and i bake at 170C from beginning till the end.
